ISRAELI COFFEE CHICKEN

ISRAELI COFFEE CHICKEN



* 1 lg. broiler-fryer chicken, cut up
* 3/4 c. coffee
* 1/3 c. ketchup
* 3 T. soy sauce
* 2 T. lemon juice
* 2 T wine vinegar
* 1 T. olive oil
* 2 T brown sugar

Mix liquids and sugar, bring to a boil. Reduce heat and simmer 5-10 minutes to reduce. Pour over chicken in shallow baking dish and bake at 350 degrees uncovered for 1 hour. Baste. Good served cold as well as hot.

Can this be done with regular vinegar and not wine vinegar?

I don't see why not. Maybe try Apple Cider Vinegar for the exchange.

I'll try it tonight and see.

I normally use Rice Wine Vinegar and have no problems using it rather than normal wine vinegar...I don't see where apple cider vinegar would be any trouble.

I'll try to find more Middle Eastern recipes with coffee...

I also have [info]the_pantry which may have some recipes there.
